There are just a few more weeks of summer left, but so many more recipes I want to try on the grill! Since the Minnesota State Fair is less than a week away, I’ve been inspired to eat my meal on a stick! What is your favorite fair food? What is the strangest thing you’ve tried at the Fair? Fair food is delicious, but most often, not gluten or dairy-free. So this week we’ll make kabobs! Here is what is on the menu:
Steak Fajita Skewers with Cilantro Pesto
This week, we tried this recipe from The View from Great Island. It was awesome!! Even though steak is delicious on the grill, it can be a pretty heavy meal. By cubing it and making a kabob, the meal is much lighter and you don’t have to commit to a huge steak! My friends’ garden is bursting with peppers so making fajitas is a great way to eat through the harvest. The Cilantro Pesto is so fresh and simple. Talk about an exciting way for kids to eat their veggies!
Chips, Salsa, and Guacamole
Corn chips are gluten-free (double check the bag to make sure!) so I’ll be cracking open a bag and serving with some fresh salsa and guacamole. Here is my recipe for guacamole:
- 4 Avocados
- 1 Roma tomato
- 1/2 of a red onion
- 1 clove of garlic
- juice of 1 lime
- 1 jalapeno pepper
- 1/4 cup cilantro
- 1 TBSP chili powder
- salt and pepper to taste
Pit and carve out the avocados. Cut up the tomato, onion, garlic, jalapeno pepper, cilantro. Mash ingredients. Add chili powder, salt, pepper and lime juice. Let sit for at least an hour. Serve.
“Gluten-Free Fried” Ice Cream
To finish our Mexican/State Fair dinner, lets make some Fried Ice Cream! Ok, its not really fried, but its much quicker and healthier.
- Vanilla Ice Cream
- 4 cups coconut flakes
- 2 teaspoon cinnamon
- 1 TBSP honey
- 1 TBSP chia seeds
Turn oven on broil. Toast your coconut flakes, watch carefully and turn as needed. When toasted, remove from oven and let cool 5 minutes. Add coconut flakes, cinnamon, honey, and chia seeds to a food processor. Blend until combined. Roll ice cream balls in mixture, or just let your guests sprinkle it on themselves. Serve with other toppings you desire.
I am so excited to fire up the grill and make a gluten-free meal for my guests!
